I hate wasting food, and kale stems are no exception. When my dog Sam isn’t crying for them and allows me to save some (he’s a big kale fan), I like to whip up this vegan pesto. It’s super simple, creamy and delicious. Measurements are approximate so play around with it to get the flavor and texture you like. Try it out and lmk what you think!
Stems from 1 bunch of kale⠀
1 avocado (this gets you the creamy texture)⠀
1/2 cup hemp seeds⠀
1/4 cup nutritional yeast⠀
3 cloves of garlic⠀
Splash of olive oil⠀
Juice from 1/2-1 whole lemon (I like to go overboard here)⠀
Salt and pepper to taste
Blend all ingredients up in a Vitamix or similar blender until smooooooth. Mix with your fave pasta and top with basil or use as a dip or sandwich spread. Mangia!
